If you have been a guest at Allure on Currumbin you may have seen me (Cheryl) turn away quite a few diners who arrive.
I thought it would be worth letting you know the reasons behind this.
You see, we carefully plan our staff needs against a whole range of factors including:
- Booking numbers
- Time of first booking
- Time of last booking
- Weather (the nicer the weather the more likely we are to have last minute bookings and people walking in without bookings)
- Experience of staff
- Skills of staff
- Seating arrangements
- Ongoing assessment of day to day of average time dining (varies according to a whole range of factors)
We also keep an eye on how many walk in guests we generally receive at this time of year.
So we put a lot of thought into how to ensure the best possible dining experience.
We Turn Away Up To 50 Diners
Despite the planning, we often turn away up to 50 diners on a busy night.
And as much as it breaks my heart to turn away guests who have often travelled and have been looking forward to dining with us, we really don’t have any option.
You see, for us it’s all about maintaining the highest standards of quality food and service.
We Plan For Wonderful Service
If it’s a typical night, the team we have working is giving wonderful service to our guests.
But if we take in more (unexpected) guests, we’ll then be stretched and the service quality will slip.
We’re not prepared to compromise on the quality our guests receive just so we make more money.
It’s about finding that perfect balance between:
- having the right team in place to ensure remarkable service for our booked guests and what walk-in/last minute bookings we receive, to
- having too many staff and not being viable.
It can be a fine balancing act.
Our Aim Is To Delight
That might mean disappointing a guest because we have to turn them away, but we would much prefer that than disappointing them with slow service, long waits and a rushed feeling.
We simply don’t wish to take on new guests unless we can delight them.
Obviously we encourage bookings as that assists us greatly in creating the best possible experience for you.
